Not a big fan of red velvet cake, but Louie is, so I made one from a Food Network recipe. I only have 2-nine inch pans, so I made 2 layers instead of 3. I didn't want to make the entire amount of frosting, so I halved it and used it all for a crumb coat which came out to be the perfect amount. Any more and it would be too sweet or gathered to the side of the plate and thrown away. I could of made more frosting for a better presentation, but Eeh...atleast it tastes good.
